On Getting Older, and Wiser

Today is my 33rd birthday, and although I am very aware that I am now closer to the age of forty than twenty, I’m okay with that.  In fact, I’m feeling that with each coming day that I believe that I am where I’m supposed to be. Time is very fleeting, we all know that. Since I had my baby girl the concept of how quickly time is passing has become very apparent to me; I am watching her grow and change every day. However, the only important time is now, in this moment, and I am making the Now the primary focus of my life. I don’t want to miss it by thinking of the past, or what will be happening tomorrow.

It is amazing that now, on this day, I have never been happier, and exited in my life.  I feel so powerful, and lucky, and am living each day abundantly, because the way I feel is exactly where I’m headed.

Crock Pot Chicken with Black Beans and Cream Cheese

I LOVE Mexican food. This dish makes me feel good, while eating it! This is a fantastic, quick throw-it-all-in-the-pot, and leave for work recipe, that I found on Food.com (Recipe #89204). I love using the Crock Pot (when I remember that I have one!). There’s nothing quite like coming home to a delicious Mexican aroma wafting through kitchen, reminding me of those lazy days of laying on the beach in Los Cabos, while on vacation.  crock pot cream cheese chicken

Here I have adapted the recipe so it will serve 2 (and a half, ha), and I have changed the ingredients list to organic foods, containing the updated nutritional info. Half an hour before you are ready to eat put on a pot of quinoa, and voilà! Dinner is served.
