Garden of eatinSo, I have now officially been a vegan for 23 days, and feel amazing (even besides the 2 lbs I gained, ha). Spring break has come and gone and my fiance and I spent the last week of it creating our very own vegetable garden.

Now, I have NEVER had a green thumb (I mean, even cacti have died many times in my care), but I have managed to keep my dog, and baby alive for the past few years, so raising my own plants can’t be too far of a stretch, right?!

30-Day Vegan Challenge

Day 1

Okay, we’re doing it!  Starting today, Saturday March 15, 2013, my lil’ family is going vegan.  So what exactly is a vegan diet?  A vegan diet is healthy, low fat, high in fiber, and rich in vitamins, minerals, and antioxidants. It includes eating whole grains and we will be eating no processed foods (although some vegans still eat processed foods; Oreos are vegan).

Vegans avoid all animal proteins including meat, dairy produce, eggs,and animal derived products such as gelatin and honey.  It’s a plant based diets consisting of grains, beans, lentils, nuts, seeds, vegetables, and fruits. It is a varied diet, and is the healthiest option of all.

The book The 30-Day Vegan Challenge, by Colleen Patrick-Goudreau is an amazing resource.  Not only does her book contain recipes, but is is designed to make the transition period to becoming a vegan easier.  It contains chapters on dining out, packing lunches, travelling, making your way around the grocery stores, reading labels, etc. Colleen suggests that by trying a 30-day challenge you break your old eating habits and form new, healthier and long lasting ones.

Whippoorwill Trail / Sandy Cove

This is how I love to spend my Saturdays: hanging out with my perfect lil’ family and going on a family hike!  Harrison Hot Springs, BC is only a 15 minute drive from our house and is a perfect destination on a sunny weekend.  Throw the hiking backpack in the car, some trail mix in our pockets,  and off we go!Joel and Jaima

I had read about the Whipporwill Trail in the Vancouver, Coast and Mountains: Backroad Mapbook and was eager to give it a try. It is listed as a moderate, 4 km, partial loop hike, and it took us about an hour and a half.

A Weight off My Mind

I want to feel good about my body.  I am now at the lowest weight I have ever been in my adult life (including high school) and it is frustrating because no scale number ever seems to satisfy me.  I am a habitual daily weigh-er. I get up the morning, use the bathroom, then suck my stomach in (even though it doesn’t help), and step on the scale with a gleam in my eye;  hoping the number will be a just a little lower than yesterdays, NOT higher which can catastrophically cause me to tumble into the “well I guess I didn’t try hard enough yesterday” mantra. I hold my breath, look down and “crap, it is higher! 0.4 lb higher (yes, I have one of those wonderful scales that tells you every little ounce you weigh!).” I step off, sigh, and look at myself in the mirror wondering when this ‘perfect body’ I have always imagined for myself, with one day be reflected back at me. The scale

What is so amazing to me is that a number on the scale can actually instantly change my feelings to feel good, or bad about myself.  It can lighten, or darken my mood, every time I dare step foot on it.
